Quantities and budget are estimates, calculated with our raclettes from €7 a portion. Enjoy!

    The right quantities, in short

    • Cheese: 200 g per adult, 250 g for big appetites, 100 g per child. Our sliced raclette is sold in 200 g portions, one per person.
    • Charcuterie: 100 g per adult, in 100 g portions.
    • Potatoes: 300 to 400 g per adult.
    • Gherkins and baby onions: three or four per person, for crunch and acidity.

For variety, pick a plain raclette (Savoie farmhouse or Morbier), a smoked one and a flavoured one: truffle, pepper, wild garlic… One portion of each for three guests, and everyone gets to try everything.

For Click & Collect, raclette is ordered from 2 portions; delivery is available from 35 €. We lend the household machine free of charge from 6 people, for collection or delivery.

    Quantities

How much raclette cheese per person?

200 g per adult on average, 250 g for big appetites, about 100 g per child. For a vegetarian table, allow 250 g instead.

How much charcuterie for a raclette?

About 100 g per adult, shared between two or three kinds (smoked ham, rosette, coppa…), and half that for a child.

    How many potatoes per person?

Between 300 and 400 g per adult depending on appetite, 150 g per child. Small, firm new potatoes are ideal: ours are already oven-baked and seasoned.

Raclette for 10 people: how much to order?

For 10 adults: 2 kg of cheese (10 portions of 200 g), 1 kg of charcuterie, 3 kg of potatoes, two jars of gherkins and one of baby onions. For a big table, a half wheel of Raclette du Valais (2.4 kg, 8 people) and a traditional machine make a great impression.

    The cheeses

    Raw milk or pasteurised milk?

We only work with raw-milk raclettes from small artisan, mostly farmhouse producers. Raw milk is not heated before cheesemaking: it keeps the natural flora that gives the cheese its aromatic richness as it matures. Pasteurisation (15 to 20 seconds at 72 to 85 °C) kills all microbes, good and bad, and clearly dulls the flavour.

Raclette de Savoie IGP is matured for at least 8 weeks, Raclette du Valais AOP from Bagnes for at least 12 weeks.

Can I eat raw-milk raclette when pregnant?

Official guidelines advise pregnant women against raw-milk cheeses. Raclette that is fully melted and served very hot reduces the risk but does not remove it entirely: ask your doctor or midwife for advice.

    How long does raclette keep?

Our raclettes are sliced to order. Keep them in the fridge in their packaging and enjoy them within 3 to 4 days. Take them out half an hour before dinner: they melt better and show more flavour.

    Our tips

White or red wine with raclette?

White is the classic match: a dry but rounded white, such as a Savoie wine (Chignin, Apremont), suits the melting cheese. Red works too if it is not too tannic: a fruity, easy-drinking wine, Gamay de Savoie, Poulsard or Trousseau from the Jura, especially with charcuterie.

Our wines and alcohol-free grape juices are under « On the side » on our menu.

    Which charcuterie goes with raclette?

A smoked ham, a rosette and a coppa make the basic trio. For a more festive raclette, add air-dried Savoie beef or a truffle spianata. Allow about 100 g of charcuterie per person.

    What about vegetarians?

Raclette works beautifully as a meat-free meal: go for several cheeses (plain, with ceps, with pepper, with truffle), potatoes, gherkins, baby onions and a few roasted vegetables. Then allow 250 g of cheese per person.
