€7.50 / portion · Cheesemonger’s pick
- Origin
- Ferme de Seraussaix, Morzine, Haute-Savoie
- Cheese
- Uncooked pressed cheese, raw cow's milk
- Taste
- Balanced, characterful flavour with milky aromas. Smooth texture, not too oily.
The benchmark raclette
This is the raclette to start with, and the one that never leaves the table. It comes from the Ferme de Seraussaix in Morzine, Haute-Savoie, where it is made from raw cow's milk. It carries the Raclette de Savoie IGP, which guarantees its origin and how it is made.
The taste
Balanced and characterful, with lovely milky aromas. Once melted, it is smooth and not too oily: it coats the potato without drowning it.
How much to allow?
We slice it to order in 200 g portions, enough for one person. Allow 250 g for big appetites. For variety, pair it with a smoked raclette and a Morbier: that's exactly what goes into our shepherd's basket.

A wood-smoked farmhouse raclette

The taste
Characterful, with milky, smoky aromas and woody notes. Once heated, it stays meltingly soft and not too oily.
What to serve it with?
It goes beautifully with mild charcuterie (cooked ham, ham fillet) and adds contrast next to a plain raclette. It is one of the three raclettes in our shepherd's basket.

A recommander. Accueil chaleureux.
