A raclette with a kick, not a burn
This raw cow's milk raclette comes from the Fromagerie de la Durance in the Hautes-Alpes. It is flecked with Espelette pepper, which gives it warmth without scorching the palate.
The taste
Clean, well balanced and lively, without being hot. Once melted, it stays meltingly soft and not too oily.
What to serve it with?
It livens up a table of milder raclettes and pairs well with coppa or rosette. A good choice for guests who like bold flavours.
How much to allow?
Sliced portions of 200 g, enough for one person.
For variety
Build your basket
A great raclette means two or three different cheeses on the table. Add them to your basket, portion by portion.
