A herby raclette

This raw cow's milk raclette comes from the Fromagerie de la Durance in the Hautes-Alpes. It is flecked with wild garlic, a woodland plant with a softer, greener garlic aroma.

The taste

Mild, well balanced and herby. Once melted, it is meltingly soft and not too oily.

What to serve it with?

It brings a fresh note to the table and goes well with new potatoes and a green salad. A lovely alternative to plain raclette.

How much to allow?

Sliced portions of 200 g, enough for one person.

For variety

A great raclette means two or three different cheeses on the table. Add them to your basket, portion by portion.
